No-Bake Santa’s Christmas Strawberry Cheesecake Deligh
Base
200 g digestive biscuits (or graham crackers)
100 g unsalted butter, melted
Cheesecake Filling
300 g cream cheese, softened
250 ml cold whipping cream
80 g powdered sugar
1 tsp vanilla extract
Zest of ½ lemon (optional)
Strawberry Layer
300 g fresh strawberries, hulled
2–3 tbsp sugar (to taste)
1 tbsp lemon juice
Decoration (Santa Look)
Whipped cream
Fresh strawberries
Mini chocolate chips or chocolate pearls (eyes)
Mini marshmallows or whipped cream dots (hat trim)
1. Biscuit Base
Crush the biscuits finely and mix with melted butter.
Press firmly into the base of a springform pan or dessert cups.
Chill for 10 minutes.
2. Strawberry Sauce
Blend strawberries with sugar and lemon juice until smooth.
Simmer for 5–7 minutes until slightly thickened. Cool completely.
3. Cheesecake Filling
Whip the cream to soft peaks.
In another bowl, beat cream cheese, powdered sugar, vanilla, and lemon zest until smooth.
Gently fold in the whipped cream.
4. Assemble
Spread cheesecake filling over the biscuit base.
Top with strawberry sauce, swirling gently.
5. Chill
Refrigerate for at least 3–4 hours (or overnight) until set.
Slice strawberries in half and place upside down (Santa hats)
Add whipped cream for the hat trim
Use chocolate chips for eyes
Add a small whipped cream dot for the pom-pom
For individual Santa cups, layer biscuits → cheesecake → strawberries in glasses.
