  1. Prepare the Biscuit Dough:

    • Add the cold, cubed butter and cut it into the flour using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

    • Gradually add cold water, mixing until the dough just comes together (add a little more water if needed).
    • Turn the dough onto a floured surface, knead it gently, and roll it out to about ½-inch thickness.
    • Using a round cutter, cut out biscuit shapes and place them on the prepared baking sheet.
    • Bake for 12-15 minutes or until the biscuits are golden brown. Allow them to cool completely.
  2. Make the Cream Filling:
    • In a medium bowl, beat together the heavy cream, cream cheese, powdered sugar, and vanilla extract until smooth and thickened.
    • Refrigerate the filling while the biscuits cool to ensure it firms up.
  3. Assemble the Sandwiches:
    • Once the biscuits have cooled, spread a generous amount of cream filling on the flat side of one biscuit.
    • Place another biscuit on top to form a sandwich.
    • Optionally, sprinkle some extra shredded cheese or herbs on top for garnish.
  4. Serve:
    • Serve these cheesy, creamy biscuits immediately for a warm and delicious treat, or refrigerate until ready to enjoy.
