Instructions:
Step 1: Prep the Veggies
Grate the carrot using a box grater or food processor.
Finely dice the onion and red bell pepper .
If using leafy greens like zucchini or spinach , grate and squeeze out moisture before adding.
Step 2: Mix the Batter
In a large bowl, combine:
Grated carrot
Chopped onion and bell pepper
Fresh parsley (if using)
Shredded cheese
Mix well to evenly distribute everything.
Add:
Eggs
Flour (and baking powder if using)
A pinch of salt and pepper
Stir until thick and cohesive—don’t overmix; a few lumps are fine.
Tip: If the mixture is too wet, add a spoonful more flour.
Step 3: Fry Until Golden
Heat oil (about ½ inch deep) in a skillet over medium heat .
Scoop heaping tablespoon portions of batter into the pan.
Press down gently with a spatula to flatten slightly.
Fry for 2–3 minutes per side , or until golden brown and crisp.
Transfer to paper towels or wire rack to drain.
Step 4: Air Fry Option
Preheat air fryer to 375°F (190°C) .
Lightly brush or spray fritters with oil.
